I love a pasta salad that I can just make up using what I have on hand. There are so many different variations to this salad and you can customize it to your taste. Enjoy!
(1 ) 12 ounce package tri color Rotini pasta
9 slices of bacon
3/4 cup mayonnaise
1/4 cup sour cream
1 package DRY Ranch Salad Dressing mix
1/2 teaspoon of garlic powder
1/4 teaspoon black pepper ( add more to taste)
1 medium cucumber sliced
3/4 -1 cup green peas (I usually cook these in the microwave according to package directions)
1 cup grape tomatoes
1 cup SHARP shredded chedder cheese
4.25 ounce can sliced black olives
(I did not add the tomatoes or olives in the photo because I didn't have them on hand.)
Cook the pasta until tender. Mix the mayonnaise, sour cream, dressing mix, garlic powder, black pepper together and set aside. add sliced cucumber, green peas, tomatoes, sharp chedder cheese, black olives and crumbled bacon. Gently stir in the dressing you made and refrigerate. I think this tastes better if you mix in the Ranch dressing right before you eat it. The pasta soaks up the dressing and makes it less creamy
I love this salad because there is so many different variations you can make. Start with the standard dressing and just adjust to your taste.
Things to add or replace
broccoli
green onions
shredded carrots
green pepper
chicken
bacon bits instead of the cooked crumbled bacon
chopped ham
yellow peppers
celery
red pepper
artichoke hearts
This makes a great potluck side and you can use whatever ingredients you have on hand
